Most of you reading this blog are pretty familiar with what Celiac Disease is--an autoimmune disease in which my body can't process gluten--because you've spent time with me. However, here are some additional stats about Celiac Disease:
*1 in 133 people have Celiac. Only 95% of those people actually know it.
*It can take 6-10 years to diagnose.
*There is no medicine for Celiac. The only "cure" is a gluten-free diet.
*There are over 300 different symptoms for Celiac.
